Enchant boots : Tuskarr's Vitality
surpasses the 22 stam enchant imo and should be mentioned, Movement speed is great for a tank as mobility can be vital in a raid setting.
Also for those who are way over defense cap
super health
on chest could be a useful enchant, it may not scale with kings but it sure does scale with sanctuary and if you raid with a prot pally it could be a boost in probably the most useful stat we stack.

is a great pickup, the honor could come from one WG, and 30 stamina could last till rep is grinded with hodir.

I also use the 275 health enchant to chest over defense rating now that I'm easily over the cap.
One gem you are missing is the Green Defense Rating/Stamina gem, for use in yellow sockets when your already over the 8% hit cap and you want the socket bonus.

I think the Tuskarr > Greater Fortitude is debatable. It might be better for druids/warriors/paladins who have almost zero good ranged threat gen abilities, but for a DK who has things like D&D, HB, BB, IT that all work at ranged, then added to the fact we have 2 taunts one of which actually pulls the target to melee range, the need to have faster run speed is greatly reduced.
Not saying it shouldn't be listed as an option, just saying you shouldn't imply that tuskarr is better, because honestly most people will take pure stam over it.

I don't agree on the gem list. Str gems for tanking? No way. Not even in a mixed orange one ;)
Generally I think orange gems shouldn't be in that list, same for pure red ones.
Only gems needed are purple (dodge/sta and exp/sta), blue (sta), green (def/sta and maybe hit/sta so that your taunt doesn't miss) and yellow (def - but only temporarily until you get enough def on your gear to be able to replace them with green def/sta ones without dropping below 540).
You might also want to mention cheap alternatives to the enchants. The 2nd best option usually is 100g to 200g cheaper and is stil almost as good as the ones in your guide. Those are pretty useful for new tanks that are still gearing up (no need to waste a 250g enchant on an ilvl 200 item).

since Super Health will not scale with several buffs? Instead of gemming Defense, which is usually not a good idea unless you are below the Defense cap, you could have room to Gem for stam/dodge with Greater Defense?
Basically, Greater Defense gives you defense rating so that you don't have to gem for more Defense, and you could instead gem for stam (which would scale w/ buffs) and/or dodge (more avoidance).
its totally situational. If u are geared out in uld25/ToCr gear, u most likely wont need to chant for def to get def capped.
for beginning DK tanking however, it may help them get def capped.

Well when you get gibbed by failing to exit a WW, Fail to move Grob quickly enough to get dps outta clouds, Fail to get to a boss/add pickup on multitarget fight, fail to successfuly pull auryia without wiping the raid (and theres many more situations than this) then you will begin to see how mobility can be a major factor in raids.
Especially
as a tank where your job is to control the battle itself.
But I could see how the extra 7 stamina could serve you much better.
