Level how you want, I would quest until I got sick of it, then i would put together a instance group. Also before you do instances look up the quests that chain you thru to the instance.My final warning, do dragonblight before icecrown and grizzly hills before Zul'drak for areas. It is just that much more fun to see the story unfold if you do it in the right order.
Don't worry about getting a lot of experience in instances, since with the reduced amount of trash, you really don't get much.I started in Borean Tundra at 68, ran the Nexus one time when I was completely done with that zone. Went over to Howling Fjord, started questing there. Got the quests for Utgarde Keep pretty early, and ran that once. Now I'm almost level 72, with another half of Howling Fjord to do. I wouldn't consider myself overleveled. Those two instances might be possible at 68, but the mobs inside are 71-73 and the items that drop require 70-71 to equip.There isn't really a need to run instances more than once when leveling either. They don't give any rep until 80, and there's usually only one or two items that can drop there that are even of use to you. Just run them once, get your blue quest rewards, and move on.
Do it twice... one toon do all the questing and on the other do all the instances with just enough questing to fill in the leveling.You DO have more than one toon, right? ;)
I'm the same way, but I managed to find a peaceful balance in the end; sure, the content will get easier, but doing the quests and instances for the experience and lore is just as good to me, and if I'm reading this right, it's the same for you.I hit 80 after clearing Borean, Fjord, Dragonblight, Sholazar and half of Grizzly. That left me with Icecrown, Storm Peaks, Zul'Drak, Crystal Song and the second half of Grizzly. Instance-wise, I did all the ones for the zones I cleared. Obviously I have a lot left to enjoy.The balance I found is still finding enjoyment in doing them (quests and instances) after 80. I get A TON of gold, I still enjoy the story, and I can actually do a lot of the group quests by myself, with ease. If you miss out on the lower-level dungeons, and you're not one to enjoy them if you're too strong, try them as a heroic. They're more or less the same thing, with a few changed abilities.

I'm a perfectionist too in the way that you described. That means that i dinged 80 in Zul'drak and continiued to do all quests in Sholazar Basin, Storm Peaks and Icecrown while I was 80 :|
@Arideni:It's a shame that you didn't complete Guru of Drakuru the traditional way, it's a great questline :(
